Anglo-Saxon Cheese Spread

While flipping through recipe books in search of something wonderful to serve to their Majesties for Wassail Feast, we happened upon this recipe. If we could have had a Wassail Tea Luncheon, this recipe most certainly would have been worthy to serve to our tearoom guests. It has a pleasing texture combined with simple yet interesting flavours that mingle well with all varieties of bread, fruit, and vegetables.
- 1 cup cream cheese, softened
- 1 cup small curd cottage cheese
- 1 tbsp white wine vinegar
- 1 tsp rose water or 1/2 tsp almond extract
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- Place all ingredients in a medium-sized bowl.
- Cream together until smooth.
- Cover bowl with a lid and chill one hour before serving.
