Meringue Nests
These are an excellent light dessert after a meal. A nest loaded up with fruit and cream is called a Pavlova.
- 3 egg whites
- 1 cup granulated sugar
- 1/4 tsp cream of tartar
- 1 tsp vanilla or almond extract
- Pour room temperature egg whites into mixing bowl.
- Blend on high speed until frothy and soft peaks form.
- Add sugar gradually while the mixer is running.
- Add extract.
- Blend until really stiff peaks form, about 3 to 5 minutes. Egg whites will appear glossy and stiff enough to cling to beaters and hold their form completely.
- Push into a piping bag ready to make required shapes.
- Bake in 300 F oven for 1/2 hour or until nests appear dry. Leave in the hot oven to cool completely. Overnight is recommended. Store in a loose lidded container.
