Beef Barley Vegetable Soup
- 1 large cooking onion, chopped
- 2 lbs stewing beef cut into small cubes
- 2 celery stalks with leaves, chopped
- 1/4 cup butter
- 1 cup beef bouillon
- 1 cup barley
- 1 tsp pepper
- 1 tsp dry mustard powder
- 3 shakes Worcestershire sauce
- 1 tsp basil
- 2 cups of mixed vegetables
- Place the 4-litre pot on the stove and set at medium heat.
- Add butter, chopped onion, beef and chopped celery, including the leaves, to the pot and sauté until the beef is cooked.
- Fill pot 3/4 full of water.
- Add beef stock, vegetable and barley.
- Bring to boiling point stirring occasionally to prevent sticking.
- Turn heat down to minimum, stirring occasionally.
- Add spices, stir and enjoy the aroma of the soup.
