Grandpa's Oatmeal Cookies
Originally called Old Fashioned Oatmeal Cookies I found it appropriate to rename them as they are my father's favourite. I make these with non-hydrogenated margarine (better for the heart) as opposed to butter. I prefer to use a mixture of different raisins as it makes the morsels more interesting. This is the only change I have been able to slip past my Dad. Oh, I am sure he noticed, but I think he likes them this way. All other changes and additions were readily noted and I was asked if I could just make them plain with raisins. Nothing fancy. His son and grandchildren also prefer them this way. My mom, sister and I must be of the more adventurous type - we like them with coconut as well.
- 2 cups brown sugar
- 6 cups quick, rolled oats
- 2 cups non-hydrogenated margarine
- 2 cups white flour
- 1 tsp salt
- 2 tsp baking soda
- 2 cups assorted raisins
- Combine flour, oats, and salt.
- Mix in margarine until blended and crumbly looking.
- Boil a kettle and measure out 1/2 cup of the water in a small measuring cup.
- Stir in the baking soda until fizz has settled and soda is dissolved.
- Pour over oatmeal mixture, add raisins mixing until just blended. consistency should be sticky and just wet enough to hold it's shape.
- Using two teaspoons, place mounds on parchment-lined cookie sheets.
- Bake in 350 F degree oven for 9 minutes.
- Cool on a wire rack.
Makes 60 tea time sized cookies.
Variations:
Thumbprints: Add about 1/2 cup more flour to the recipe to make for good handling. Roll the dough slightly in palms to form a 1-1/2 inch ball. Poke your thumb or finger into the centre making a hole that is 3/4 of the way through the dough. Fill the hole with jam, apple sauce, or mincemeat.
Great additions: Substitute one cup of rolled oats with 2 cups coconut. Instead of (or as well as) raisins, add dried cranberries or dried cherries to the mix.
Change it up with chocolate chips, butterscotch chips, chocolate mint chips, flax seeds, pecans, walnuts or almonds.
