Tuna Salad
Just like egg salad, tuna salad tastes yummy on any type of savoury bread. It is also wonderful piled high on a bed of lettuce, wedged into celery stalks or mixed in with macaroni.
- 2 cans Albacore tuna in broth (not oil), well-drained
- 2/3 cup mayonnaise (make it creamy)
- 1/4 cup finely chopped celery
- 2 tbsp finely chopped chives or green onion
- 2 tbsp sweet green relish
- Salt and pepper to taste
- Place tuna in a bowl and mash with a fork.
- Add remaining ingredients and combine with a fork until a consistent texture is achieved. The amount of mayo can be varied according to taste. Creamy tuna salad is yummy, so don't be stingy with the mayo!
- Spread on your favourite bread or pile it in a pita.
Makes about 6 good-sized sandwiches.
