Mints
I discovered these wee sweets while working at Faye's Fancies in Port Elgin. The customers were delighted to receive a small cut-out mint on their plate with their receipt. Some customers purchased them to add to gifts for their friends.
- 1/3 cup corn syrup
- 1/3 cup margarine
- 2 tsp peppermint
- 4 cups icing sugar
- 2 drops food colouring
- Mix corn syrup, margarine, and peppermint together.
- Add 3 cups of icing sugar one cup at a time and mix together.
- Knead at least one more cup of icing into the dough with your hands.
- Dust rolling surface with icing sugar.
- Roll out to 1/4 inch thickness.
- Cut with a tiny cutter of your choice.
- Allow cut-outs to dry on parchment paper for a few hours.
- Store candies on layers of parchment in a sealed container and they will last for months.
